Bodino Butterscotch - Italian creamy pudding with brown sugar caramel coating.Make this easy recipe in just 30 minutes!
* Ingredients :
° Butterscotch Budino Custard:
° 3 tablespoons salted butter
° 1 cup brown sugar
° 1/4 cup cornstarch
° 1 cup heavy cream
° 2 cups full fat milk
° 3 egg yolks
° 2 tsp vanilla or 1 vanilla bean
Salted Caramel:
° 1 c sugar
° 1/2 c butter
° 1/2 c cream heavy
° 1/4 teaspoon sea salt (plus more for the caramel topping)
* Directions :
To make Butterscotch Pudino Custard:
In bottomed saucepan, melt butter on heat. Add the brown sugar and keep stirring until the brown sugar and butter are completely dissolved.
Stir in cornstarch.Add heavy cream andamp; raw milk.Bring to boil & leave mixture thicken.Continue cooking and stirring until the mixture covers the back of the spoon.While the milk mixture is cooking, transfer the egg yolks to a small bowl.Soften the yolks by pouring a small amount of hot milk into a bowl.Utilzie a whisk & keep stir.Transfer the mixture back to the pot. Let it boil for one minute.Add vanilla
Permit it cool in fridge & cool totally .If you need to speed up the cooling process, use an ice bath.
How to make salted caramel:
Two ways:
In a medium saucepan, heat the sugar over medium heat, stirring constantly.The sugar will begin to collect and turn amber. Continue stirring.When the sugar is completely dissolved, add the butter.The butter will foam, carefully .Add butter and caramel until melted.Add sugar and butter with a whisk.
Sprinkle heavy cream into the mixture and stir.
Let it boil for 1-2 minutes.Removing from heat & adding sea salt. Lets configure.The easiest way is to melt the butter and sugar in a heavy-bottomed saucepan over medium heat.Let the solution dissolve and stir with a wooden spoon or heat-resistant spatula.Continue stirring and cooking until it turns amber. Please consider this carefully. Add heavy cream and sea salt. Boil for 1 minute and leave.For a flaked dessert: a layer of butter cream topped with a layer of salted caramel.
