Authentic Filipino Pancit



Lately I've been thinking about the family traditions and recipes that always come to mind. Almost every Filipino family has someone out there who has a recipe for pancit, a fried noodle dish with meat and vegetables. Since Pancit literally means pasta, there are many different versions of this dish and no two families make it the same. I knew my dad knew the recipe so I called him.


* Ingredients:

° 1 package (8 ounces) rice noodles, bihon
° 1 pound chicken breast cut into cubes
° 1⁄2 cup teriyaki sauce
° 5 cloves minced garlic
° 2 cups shredded cabbage
° 1 cup sliced ​​carrots
° 1 cup sliced ​​onion
° 1⁄16 teaspoon accent seasoning (msg)
° 1 tablespoon cooking oil
° 2 tablespoons cooking oil
° 1⁄8 cup cooking oil
° 1 tablespoon soy sauce
° 1⁄4 cup soy sauce
° 1⁄2 cup green onion (optional)
° lemon slice (optional)

* Directions :

In a zip-top bag, marinate chicken with teriyaki sauce and 2 minced garlic cloves overnight.
The next day, in a large bowl, soak rice noodles in warm water for 15-30 minutes, then drain completely.
Drain the marinade from the chicken and get rid of the marinade.
In a skillet, heat 1 tablespoon of oil over medium-high heat and brown the chicken, drain and set aside.
In a large saucepan, heat 2 tablespoons of oil over medium heat and stir in 3 minced garlic cloves and sauté for 30 seconds.
Add carrots and stir for 5 minutes.
Add the cabbage, onion and 1 tablespoon of soy sauce and stir until the vegetables are soft.
Add the chicken to the vegetables and continue frying.
Add the noodles to the saucepan with 1/8 cup of the oil and 1/4 cup of the soy sauce and mix well.
Continue cooking and mixing until the pasta is well cooked and cooked through.
Serve with green onions and/or lemon juice from sliced ​​lemons.
