*Ingredients:
°1 pound beef (or ground turkey)
°1 package low sodium taco seasoning
°4 ounces cream cheese
°16 jumbo pasta shells
°1/2 cup salsa
°1 cup taco sauce
°1 cup cheddar cheese
°1 cup Monterrey Jack cheese
+For fillings:
°3 green onions
°Sour cream
*Instructions:
Preheat the oven to 350°.
In a skillet, brown the ground beef; add the seasoning to the taco and prepare according to the directions on the package.
Add the cream cheese, cover and simmer until the cheese has melted. Mix well. Set aside and let cool completely.
While cooking ground beef, cook pasta shells as directed; drain. Place the shells individually on a cutting board or baking sheet so they don’t stick together.
Pour the salsa on the bottom of a baking dish 9 13. Stuff each shell with 1-2 tablespoons of the meat mixture. Place the shells in 9 13 open pan upwards. Cover the shells evenly with taco sauce. Cover the dish with aluminum foil and bake for 30 minutes.
After 30 minutes, add the grated cheese and cook another 10-15 minutes without the foil. Garnish with green onions or olives if desired. Serve with sour cream and/or more salsa!
