The fresh catfish is white to yellowish-white, sometimes pink, with noticeable transparency & iridescence. Cooked meat is opaque and white.
* Ingredients :
°1/4 liter contains yellow cornmeal
°80 ml contains flour
°1 tsp cayenne pepper (or use red pepper)
°1 tsp garlic powder
°3 tsp of seasoning salt
°1/2 tsp black pepper
°10-12 catfish-fillets
° frying-oil
* Preparation
In shallow dish, blend first 6 ingredients.
Dip fillets in the mix also coat evenly.
Pour about centimeter of oil to large cast iron skillet or Dutch oven; heat to 350
Frying fillets in batches about 5-6 min, turn once, to golden brown.
Laying out paper towels.
