While the premise of making chicken in the slow cooker sounds easy enough, finding clear answers to how long to cook chicken, what type of chicken to use, and how best to cut it was more difficult than I expected.
* Ingredients :
° 3 large skinless chicken breasts (boneless)
° 1 (14 1/2 oz) chicken broth
° 2 cans (7/8 ounce) chicken broth mix or 2 (7/8 ounce) mushroom broth mix or 2 (7/8 ounce) brown broth mix
* Directions :
Place the chicken breasts (you can remove the bones if you like) in a crockpot. Pour in chicken broth. If it does not cover the chicken, you can add a little water. Simmer 8 hours, or 4-5 hours on high. Check the tenderness. When it falls off the bone when pulled with a fork, remove it from the crock pot. Bone removal.
In a saucepan, pour 2 cups of broth from the crock pot. Add two cans of broth and stir until thickened for two minutes. If you like, you can make beef broth from scratch using crock pot broth.
Serve the broth over the chicken. I always serve this with mashed potatoes, but the pasta would be good too. You may season to taste at this point, but the mixture of broth and chicken stock is very salty, so taste first. Enjoy!
