New York Cheesecake Cookies



New York cheesecake? Hassan. biscuit? Hassan. New York cheesecake cookies? Amazing.

It is among my top ten favorite cookies because of its uniqueness and great flavour. It's a fairly simple recipe, each cookie like a little piece of cheesecake with the perfect amount of sweetness, but made without the hassle of a springform pan or a water bath in the oven.  Well, I really ran out of words to describe cookies more, so I'll let the pictures do the talking.

* Ingredients :

° 1 14 cups graham crackers, finely ground (1 km)
° 1 cup flour
° 1 12 tsp baking powder
° 1 stick (8 tablespoons) soft unsalted butter
° 1⁄2 cup brown sugar, packed
° 1 egg, separated
° 3 ounces soft cream cheese
° 14 cups granulated sugar
° 2 teaspoons lemon peel
° 1⁄2 teaspoon vanilla

* Directions :

 Preheaat oven to 350 degres f .
In a large bowl, mix together the graham crackers, flour, and baking powder. In a medium bowl, beat butter and brown sugar using an electric hand mixer. Add the egg whites and beat until the mixture is homogeneous. Add to the graham cracker crumbs and mix until completely combined.
In a separate medium bowl, whisk together the soft cheese, granulated sugar, egg yolks, lemon peel, and vanilla until well combined. Sit aside.
Using a small ice cream scoop, roll out the cookie dough and place on a non-stick or parchment-lined baking sheet. (If you don't have an ice scoop, measure the dough into scoops of about 2 tablespoons.) Flatten it out a bit, and press your thumb into the middle of the ball to create a small bowl shape. Repeat with the remaining dough. Pour cream cheese into the blanks in the cookies.
Bake until filling is just barely set and cookies are slightly golden, about 12 minutes. Allow to cool 5 minutes on a baking sheet before removing and cooling completely on a wire rack.
