Loaded Chicken & Potatoes
The potato and stuffed chicken casserole was a hit in my home! Everyone in my house loved it and had seconds until someone wanted thirds. This one-dish meal is full of delicious flavour.
* Ingredients:
° 500gm small red potatoes
° 1 tbsp. tablespoons of olive oil
° 1 medium onion, coarsely chopped
° 1 green pepper, diced
° 1 red pepper cut into cubes
° 1 c cubed cook breast chicken
° 1 large garlic clove, finely minced
° 1 tbsp. Red pepper
° Half a teaspoon. 1/2 teaspoon dried thyme
° Half a teaspoon. salt
° Half a teaspoon. pepper
* Directions:
Put the potatoes in a saucepan of cold water and salt, bring to a boil and cook for 25 minutes. Drain, permit cool, peel & cutting to cubes.
In a non-stick skillet, heat the oil over high heat. Fry the onions for 4 minutes, then add the peppers and fry for 4 minutes too.
Pour the potatoes, chicken, garlic, sweet pepper and thyme into a skillet.
Add salt and pepper. Mix and press all ingredients into the bottom of the pan with the back of a spoon. Cook, without stirring, for about 5 minutes, until all ingredients are golden.
