Blueberry Pound Cake



The cranberry was a source of astonishment for the colonists. Captain John Smith spoke of the Indians who ate us with strawberries, raspberries, bread, fish, and other staples of the province.

* Ingredients :

° 1/2 cup butter
° 3 eggs
° 3-1/2 cups all-purpose flour
° 2 tsp. Baking powder
° 1/4 tsp. salt
° 2 cups of sugar
° 4 cups of fresh blueberries
° 1 cup milk

* Directions :

Leave the butter and eggs at room temperature for 30 minutes.Meanwhile, oil a 10 "pipe pot; Sit aside.Sift flour, baking powder, and salt in a large bowl. Sit aside.In a large bowl, whisk the butter and sugar together on medium speed until smooth. Beat eggs.Adding blueberries to flour mix .Manually add the blueberry mixture to the oil mixture. Stir in milk to homogeneous.The mixture is laid out in a prepared frying pan.Bake in 325 ° F oven for 60 to 75 minutes, or until the wooden skewer near the center is clean. Cool  15 minutes. Loosen the cake from the edge of the pan with a narrow metal spatula. Remove cake from pan. Cool completely on a wire rack.
Note: This is excellent on its own, but would be great with a little added lemon zest or a handful of white chocolate chips. Or maybe a mixture of blueberries and berries. Ooh, that would be nice. Enjoy !
