Mexican-Shrimp-Cocktail



*ingredients :


° 1 white onion

°6 large garlic cloves, coarsely chopped

° 2 tsp salt, plus more to flavor

° 1 tsp ground black pepper

° 1 pound large shrimp (16-20 pieces), peeled, fins, tails removed, except for 6, top with garnish

° Half a cup of ketchup

° A glass grape fruit juice

°2 to 3 tsp lemon juice (to flavor)

° Mexican hot sauce 

° small jicama, peeled & cubed (about 1 cup)

° large cucumber, diced (for 1 cup)

°2 avocados, peel & diced 

° 1 cup loosely packed chopped coriander

° lime wedges for serving

° coriander sprigs for serving

* instructions :


Cut the onion in half. Cut in half and cut the other half into large pieces. Putting chopped onion in  colander also putting it under cold water. banks. Fill the pot with water. Adding onion pieces, garlic cloves, 2 tsp of salt also black pepper. Leave it boil. Adding shrimp, turning off heat & simmer for 1 min or to shrimp are pink also cook through. Drain and let the shrimp cool. Discard the onions and garlic. Mix ketchup, clam juice, lemon juice, & hot sauce. In another bowl, combine the cooled shrimp, chopped onion, jicama, cucumber, avocado, and cilantro. Pour sauce on vegetable and shrimp blend & stir. Served in cups with shrimp on top. Garnish with wedge springs of lime and coriander.
