*ingredients:
° 7 tsp butter
° 1 c yellow onion
° 1 c carrot
° 1 cup celery, cut into cubes
° 4 cloves garlic, minced
° 3 tsp flour
° 12 oz (1 can) evaporated-milk
° 32 ounces (1 liter) chicken broth
° 4 c cooked chicken
° 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
° 2 teaspoons fresh black pepper (or to taste)
° Salt to taste
+Homemade dumplings:
° 2 cups all-purpose flour
° 1 tsp + 1 tsp baking powder
° 1 tsp ground black pepper
° 1 tsp salt
° 3/4 c (6 oz) milk
° 4 tablespoons melted butter
* instructions:
1. In a large, heavy-bottomed saucepan (such as a Dutch oven), melt butter over medium-high heat.
2. Adding onions, carrots & celery. Cook for 5 minutes until the vegetables are wilted. Adding garlic also cooking for other minute.
3. Add the flour and stir until combined. Cook for 1 minute.
4. Add the evaporated milk and chicken broth and stir quickly until combined.
5. Bring to boil & adding chicken, thyme, black pepper also salt. Let the soup simmer, uncovered, while you are making the dumplings.
6. In a large bowl, whisk together the flour, baking powder, pepper, salt, and thyme. Make a hole in the center of the flour mixture and pour the milk and butter in the middle.
7. Using a wooden spoon (or rubber spatula), stir the mixture together until dough balls form. If the dough seems too dry, you can add an extra tablespoon of milk.
8. Using a tablespoon** size of biscuit, scoop out the dough and put it directly into the simmering soup. Put them around the pot, not all of them in the same place.
9. Once you add the dumplings, press them in gently so the soup just passes over them.
10. Put the lid on the saucepan and turn the heat down a bit to low (you don't want the bottom of the soup to burn but you also want the soup to still simmer over low heat to cook the dumplings).
11. Cook for 15 minutes, gently stir the soup/dumplings and cut the dumplings in half to make sure they are fully cooked.
12. If the dumplings are cooked, serve them hot! If not, cook an additional 2-3 min also check again.
