Beef Stew recipe


Delicious beef broth with vegetables is a comfort food classic! It will perfume the house with its attractive aroma and delight the whole table. It's the perfect warm-up meal after a day of skiing, a long snowshoeing ride or an ice hockey tournament. This meal is quick to prepare and cooks for a long time in the oven, letting the meat tenderize and focus the flavors to the fullest. In addition to being nutritious, tasty and very comforting, this dish is economical! You can even make this beef broth in advance, which will add extra flavor. Imagine the smoldering aroma of this meal welcoming you upon your return from a day of winter outdoor activities: nothing better to keep your heart warm!


* Ingredients :

°1 kg (2.2 lbs) diced beef
°30 ml (2 tablespoons) canola oil
°2 chopped onions
°15 ml (1 tablespoon) minced garlic
°2 celery stalks cut into cubes
°2 sprigs thyme
°1 bay leaf
°45 ml (3 tablespoons) flour
°1.25 liters (5 cups) beef broth
°60 ml tomato paste
°Salt and pepper to taste
°6 carrots cut into pieces
°6 sweet potatoes, peeled and cut into cubes

* Preparation

Preheat oven to 190°C (375°F).
Pat the meat dry with a paper towel. In a heatproof saucepan or casserole, heat the oil over medium to high heat. Roast a few cubes of meat at a time, 2 to 3 minutes, until each side is golden brown. Put the cubes on a plate.
Remove excess fat from the pot. Over medium heat, saute onions for 1 to 2 minutes.
Return the meat to the pot. Add garlic, celery and herbs.
Sprinkle with flour and stir. Pour in the broth and tomato paste. season. Heat until the first boil, scraping the sides of the pan with a wooden spoon to loosen the cooking juices.
Cover it and leave it for an hour.
Add carrots and potatoes to the pot. Cover and cook for an additional hour, until meat cracks with a fork.
