Winter has come. 33 degrees Fahrenheit all week. Snow and ice piles everywhere. It's only January, which means we have about 3-4 months of winter left.

Now that you're officially a resident of the Midwest, this basically translates to eating chicken noodle soup on a regular basis. winter. Long. It's super warm, super cozy and soothing during these cold nights.

* ingredients :

° 3-1/3 pounds bone-in thighs chicken 
° 1/2 tsp salt
° 1/2 tsp pepper
° 1 tsp canola oil
° 1 onion chopped
° 1 clove minced garlic
° 10 cups chicken broth
° 4 ribs celery, chopped
° 4 medium sized pods, chopped
° 2 bay leaves
° 1 tsp minced freshly thyme or 1/4 tsp dried thyme
° 3 cups uncooked clowski or other egg noodles (about 8 ounces)
° 1 tablespoon fresh chopped parsley
° 1 tablespoon lemon juice
Optional: extra salt and pepper

* Directions : 

1.Pat the chicken with a paper towel. Sprinkle with salt and pepper. In 6 qt.heaat Oil in saucepan on medium heat.Add the chicken skin side down in batches; bake for 34 minutes, until they are deep golden brown.Remove the chicken from the pan, peel the skin and discard. Get rid of the broth, and reserve two tablespoons.

2. Add onions to the broth. Cook and stir over medium-high heat until softened, 4-5 minutes.Add garlic and cook for 1 minute. Add broth, stirring to loosen browned pieces from skillet. The mixture is boiled.Put the chicken back in the pot.Adding celery, carrots, bay leaf & thyme.Reduce heat; cover and simmer until chicken is cooked, 25-30 minutes. 

 3.Transfer the chicken to the plate.Take the soup off the stove. Add pasta, cover, and simmer, 20-22 minutes.

4.At the same time, when the chicken has cooled, loosen the meat from the bone. Throw away the bones. Cut the meat into small pieces. Return the meat to the pot. Add parsley and lemon juice. If desired, adjust seasoning with additional salt and pepper. Discard the bay leaves.
